In any business, longevity can have a big effect. Biri, who has worked with Chamoun since 1994, demonstrates an obvious passion for Taza. His enthusiasm is mirrored by the restaurant’s friendly and attentive staff. Kitchen manager Toni Tadonji has also been with the company since the early ‘90s, and, Biri says, she treats her work “like she’s cooking for her family.” It shows.
