Several years ago, Fady Chamoun decided he wanted to do something different. The successful Cleveland-based restaurateur had already launched the popular Middle Eastern chain Aladdin’s Eatery, as well as Jasmine’s Bakery & Store, but it was time for something new. In 2005, he opened Taza, a Lebanese restaurant in Eton on Chagrin Boulevard.
Taza means “fresh,” and the word is one of the restaurant’s governing concepts. “We want to introduce people to our culture,” said general manager William Biri. “A big part of our cuisine is fresh, healthy food with no preservatives, nothing hidden.” To that end, Taza uses fresh meat and produce, along with many Lebanese imported ingredients like olive oil. Biri believes that “people want to know what they are eating,” and that is why you won’t find anything but good, honest food at Taza.
