Not surprisingly, this place serves chili, but not your standard ground beef and bean mixture, or the Skyline-esque version atop spaghetti. Instead, they use local ingredients where possible in a Southwest-inspired dish that includes whole dried chilis, fresh green chilis and whole cuts of meat, rather than ground beef.
